I own 50% of CompanyA and 50% of CompanyB. The 2 companies are totally independent.

I want to manage both in Odoo but need to to keep the databases separate.

Can anyone recommend any documentation on how to set this up?

Since you want to manage CompanyA and CompanyB separately in Odoo with independent databases, the best approach is to set up two separate Odoo instances, each with its own database.
