I need to give an employee view access to the Sales Dashboard but cannot figure out how without changing their overall Sales level to Admin. What specific access settings need checked so that they can view the Dashboard, but not have admin access to the sales orders themselves?

With help from odoo, found the right setting in Dashboard/Configuration and added that employee's role to the Sales Dashboard.
Would you be able to share the details of the configuration
Go into the Dashboard app, Configuration menu, Select Dashboards, then from the list of available dashboards, click in the Group field for the one you need to have someone access and add their role. Of course, that will mean anyone with that roll will be able to access that dashboard. Hope that helps.
Are you using Enterprise v16? There are limited functionality to the Odoo Enterprise v16 User Portal. Even if you paid for an Enterprise version, it doesn't mean that you will get full functionality. To enable certain functions, you need to pay more mone and get a consultant in order to achieve your desired functionality.
